INGREDIENTS

  • 6 slices brioche or challah bread
  • 3 large eggs
  • ¾ cup whole milk
  • 2 tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon nutmeg
  • Pinch of salt
  • Butter or cooking spray for greasing muffin tin
  • Maple syrup, powdered sugar, or berries

INSTRUCTIONS

  1. 1 Preheat your oven to 350°F (175°C) and generously grease a standard muffin tin with butter or cooking spray to prevent sticking.
  2. 2 Cut each slice of bread into quarters.
  3. 3 Press 3 to 4 bread pieces into each muffin cup, forming a cup shape to hold the custard mixture.
  4. 4 In a mixing bowl, whisk together eggs, whole milk, sugar, vanilla extract, ground cinnamon, nutmeg, and a pinch of salt until the mixture is smooth and well combined.
  5. 5 Pour the custard mixture evenly over the bread cups in the muffin tin, allowing it to soak in thoroughly.
  6. 6 Press down the bread pieces to make sure they absorb the custard completely, forming a compact cup shape.
  7. 7 Place the muffin tin in the preheated oven and bake for 22 to 25 minutes, or until the cups are puffed, golden brown, and set in the center.
  8. 8 Remove the muffin tin from the oven and allow the French toast cups to cool slightly before carefully removing them from the tins.
  9. 9 Serve the French toast cups warm, topped with maple syrup, powdered sugar, or fresh berries as desired.
