INGREDIENTS

  • 1.5 lbs Chicken breasts, boneless & skinless, cut into bite-sized pieces
  • 3 tablespoons Extra virgin olive oil, divided
  • Salt & black pepper to taste
  • 2 medium Zucchini, sliced into half-moons
  • 2 Red bell peppers, diced into chunks
  • 1 large Red onion, sliced into strips
  • 2 cups Cherry tomatoes, halved
  • 1 cup Kalamata olives, pitted and halved
  • 4 cloves Garlic, minced
  • ¼ cup Sun-dried tomatoes, chopped
  • 2 teaspoons Dried oregano
  • 1 teaspoon Dried basil
  • ½ teaspoon Dried thyme
  • 1 Lemon, juice only
  • 0.5 cup Feta cheese, crumbled
  • 2 tablespoons Fresh parsley, optional garnish

INSTRUCTIONS

  1. 1 Prepare all ingredients by washing and chopping vegetables.
  2. 2 Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
  3. 3 Season chicken with salt, pepper, and half the oregano. Cook in skillet until golden brown and cooked through.
  4. 4 Remove chicken and set aside. In the same skillet, add remaining olive oil, onion, and garlic. Sauté until onion is translucent.
  5. 5 Add zucchini, bell peppers, and sun-dried tomatoes. Cook until tender but crisp.
  6. 6 Return chicken to skillet, add cherry tomatoes, olives, remaining herbs, and lemon juice. Stir to combine and heat through.
  7. 7 Garnish with feta cheese and parsley before serving.
